Chocolate Chip Cookie-Dough Cupcakes

This recipe makes 12 amazingly delicious cupcakes!

For the cookie dough:1 1/8 cups all purpose flour

1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup of margarine, softened
3/8 cup granulated sugar
3/8 cup packed brown sugar
1/2 teaspoon vanilla
3 tablespoons of milk
3/4 cup mini semi-sweet chocolate chip

Beat the butter, sugars, and vanilla with electric mixer until creamy. Add the soy milk and beat well. Add in the salt, baking soda, and flour and slowly mix until combined. Stir in chocolate chips.

Form teaspoon-sized balls (approx. 1″ across). Roll and place on a foil-covered baking sheet. Make approximately 14 dough balls, reserving at least 3/4 cup of the dough for frosting. Refrigerate or freeze until firm.

For the cupcakes: 1 1/2 cup of milk
1/3 cup canola oil
1/2 cup packed brown sugar
1/4 cup granulated sugar
2 tsp. vanilla extract
1 1/4 cups all-purpose flour
2 Tbsp. cornstarch
3/4 tsp. baking powder
1/2 tsp. baking soda
1/2 teaspoon salt
Preheat oven to 350 degrees. Line muffin pan with cupcake liners.

Whisk together soy milk, coconut milk, sugars, oil, and vanilla. Sift in the flour, cornstarch, baking powder, baking soda, and salt, and mix until no large lumps remain.
Fill cupcake liners 2/3 full. Bake for 20 to 22 minutes or until tops are puffed and golden. Transfer to a cooling rack, and let cool completely before cutting.

*Consistency will be very thick, but makes fluffy cupcakes!

For the frosting:
3/4 cup margarine, room temperature
2 cups confectioners’ sugar
2 tablespoons milk
3/4 cup eggless cookie dough, room temperature
Cream butter with electric mixer until fluffy. Slowly add powdered sugar, 1/2 cup at a time, until well-incorporated. Add soymilk and mix until smooth, 1-2 minutes. Add cookie dough, approximately 3/4 cup of it, and mix until combined. Taste, and add more cookie dough if you like.

To assemble:
Cut hole in the top of the cupcake, drop ball of dough in. Pipe or spread the delicious frosting on.

Emilie's slow-cooker beef stew

Hey everyone! Now this is actually my own recipe, made from scratch by moi ;)


Ingredients:
1lbs stewing beef 
2 onions (I use white), sliced 
1 bag of baby carrots
Half a bag of pre-washed small potatoes 
3-4 garlic cloves, crushed
3 heaping tbsp of beef powder (beef soup from bulk barn) 
Water 
Salt & pepper to taste

Instructions:
Place meat at bottom of slow cooker.
Slice potatoes and add on top of meat.
Add baby carrots, sliced onions and crushed garlic.
Sprinkle beef powder over all ingredients.
Add your salt and pepper if needed.
Pour water in crockpot to cover all ingredients! 
Cook on high for 8 hours :) 
That's it!!

*if you want a thicker liquid, you can add cornstarch :)
**you can also add all other kinds of veggies

Homemade Spaghetti Sauce

I absolutely love this recipe!! I've made it many times, I would say it makes 5 x 4 portions (I froze them in tupperware), i also removed the balsamic vinegar because i usually freeze my sauce, so i can't add it in before serving.

Ingredients
3 tablespoons olive oil
2 cups onion, chopped and divided
1 red pepper, coarsely chopped
2 pounds hamburger (at least 90% lean) or lean ground turkey
5 cloves garlic, finely chopped
1 12 oz. can tomato paste
1 teaspoon kosher salt
1 teaspoon black pepper
3 teaspoons dried oregano
3 teaspoons dried basil
1 1/2 teaspoons dried thyme
2 14-oz. can Italian-style diced tomatoes
2 28-oz. can crushed tomatoes
1 carton fresh mushrooms (optional)
1 1/2 cups beef stock or beef broth
2 tablespoons brown sugar
2 bay leaves

Directions
1.Heat olive oil over medium high heat. Add 1/2 of the onions and saute until translucent and slightly browned. Add garlic and stir constantly for 1 minute. Add beef and cook until no red is showing. Drain beef slightly. Blend up the remaining onions and red pepper in a blender or food processor until mostly smooth. Add mixture to the garlic, onions and beef and stir to combine, cooking for another minute. Add tomato paste and spices and cook for 1 minute, stirring until combined. Add tomatoes, beef broth and sugar (and mushrooms, if using). Stir until combined and add the bay leaves.
2.Bring to a boil and then reduce to low and simmer for 1 hour, stirring occasionally.
